Today on the 20 Dollar Chef, soup szn rolls into full swing. I went with a nice chicken sausage, cheese tortellini soup. Extremely hearty, and just delicious. This is under budget and cooks quick.
Great to reheat the next morning and enjoy for breakfast. We are sipping on the best beer money can buy, Labatt Blue, while cooking this up.
Toss in your onion and garlic, caramelize, then add your sausage and half a bottle of Labatt and let it cook. Throw in the the broth, crushed tomatoes, red pepper flakes, and the S&P. Bring to a boil, add the tortellini, turn the heat down to med-low and let it simmer for 20 mins. Next, toss your beans in and lastly, throw in your spinach and bowl it up! Add parmesan cheese and serve!
- Labatt Blue
- A couple packs of chicken sausage
- A pack of cheese tortellini
- A can of crushed tomatoes
- White beans
- Chicken broth
- Red pepper flakes
- Salt n pepper
- Parmesan cheese
(add a cup of water if you’d like a bit more soup)
