20 Dollar Chef - Chicken Tortilla Soup

It's Soup Szn!!! The soup will taste better if your belly shows when you lift your hands above your head. Thats called facts. Today on 20 Dollar Chef, I make a nice ass chicken tortilla soup. It's another easy recipe. The best part is deep frying your own tortilla strips to top this recipe off with. 

To start this recipe, Chop up the onion, garlic and jalapeño if you want it a bit more spicy. Let that get fragrant then add in your 2 cups of chicken broth, cup and a half of water, diced tomatoes, tomato sauce, corn, cumin, oregano, chili powder, s&p, black beans, and your chicken. Let it come to a boil and cook the chicken up in those lovely juices and spices. 

Cut some corn tortillas into strips, then in a side pot, heat up some oil and fry up those strips for a couple minutes tops. Pull those out and let them cool off on a paper towel. 

Pull out your chicken, shred it up and add back to the pot. Slice up some cilantro and add it to your soup once you've added your chicken back in to the pot.

When plating, add your avocado, tortilla strips, and some cilantro. Then squeeze in your lime and eat up! 

Big time presentation with this recipe. It comes out looking good. The only thing that makes this taste even better, crack open a Labatt Blue, and enjoy your life. 

Ingredients:

1 tablespoon olive oil
1 onion chopped
3 large cloves garlic minced
1 jalapeño diced and seeded
1 teaspoon cumin
1 teaspoon chili powder
1 can diced tomatoes

1 can of tomato sauce
2 cups chicken broth

1 cup water
15 ounce can black beans rinsed & drained
2 cups corn drained if canned
3 bonless, skinless chicken breasts

1 avocado sliced

Crispy Tortilla Strips
6 6" corn tortillas cut into ¼" strips

1 cup olive oil
