Spicy Harissa Chicken Thighs

Here's a super easy meal to throw together, all you really need is some Harissa paste and chicken thighs. 

INGREDIENTS 

-4 bone-in skin-on chicken thighs 

-2 Tbsp of harissa paste

-1 Tbsp of honey

-Handful of purple potatoes, quartered 

-Pinch of salt

For the potatoes 

-1/2 teaspoon turmeric

-1/2 teaspoon cinnamon

-1/2 teaspoon garlic powder

-1/2 teaspoon cumin

-1 teaspoon paprika

-Wiz of olive oil

-Pinch of salt 

METHOD

-Preheat oven to 400 deg

-Combine honey & harissa paste in a bowl

-Lay chicken thighs on a sheet tray lined with tin foil 

-Rub the thighs thoroughly on both sides with the honey and harissa mixture 

-In a bowl toss the potatoes & spices together with olive oil 

-Spread the potatoes out evenly next to the chicken thighs 

-Roast in the oven for 30-40 minutes (time varies based on the size of thighs) 

-Halfway through cooking baste the thighs with more of the honey and harissa paste
