20 Dollar Chef - Grilled BBQ Chicken Pizza

 On today’s episode of the 20 Dollar Chef I am back out on the grill making a BBQ chicken pizza. You can get 2 of these made on a 20 dollar budget. I wanted to use naan bread, but the stores near me here didn't have that as an option. I called an audible and with this ready made pizza crust. This is a great “meet me halfway” style meal. I didn’t feel like fucking with making dough, so here we are. 

After you marinate you chicken for at least an hour, go ahead and get that on the grill while you get your crust and veggies prepped. Instead of tomato sauce, sub in your favorite BBQ sauce as the base to this pizza. Then add cheese. When the chicken is finished, cut it up and add it to your pizza. Add your veggie toppings and more cheese! 

Make sure to keep the grill on with the lid shut to keep the heat in so this pizza heats up and the chese melts properly. 

You should leave the pizza on the grill for about 10 mins at around 400/450. That will make your crust or naan bread nice and crispy. While you’re waiting for the cheese to melt go ahead and cut up your cilantro and scallions for garnish. 

Pizza is done and it’s time for lunch! 

Ingredients:

  • 1 or 2 pounds of chicken breast. ( Cut thin.)
  • BBQ sauce ( I like a sweeter BBQ sauce here.)
  • 2 Bags of cheese.
  • Naan bread, flat bread, or these pre made pizza crusts.
  • Cilanto
  • Red onion
  • A bell pepper
  • 2 Limes
  • 1 lemon
  • EVOO
  • Jalapeño ( If you’d like to add some spice. )

Done n done!
