Spicy Chicken Stirfry


-Chicken breast, cut into 1-inch pieces

-2 Tbsp all-natural peanut butter

-2 Tbsp soy sauce

-1 head of broccolini, sliced 

-2 red chilies, sliced

-Rice noodles

-Crushed peanuts


-Salt & pepper

-Veg oil for stir-frying 


-Have a pot of water boiling for the rice noodles, cook noodles according to packet instructions

-Place a pan on high heat, once hot add in oil to coat the bottom of the pan

-Add in the sliced chilies and chicken

-Drop the broccolini florets in the boiling water for about 40 seconds then transfer to pan 

-Stir in peanut butter and soy sauce. If the sauce is too thick add hot water until it loosens 

-Add in rice noodles

-Serve with crushed peanuts and a squeeze of lime
