The BEST Way to Cook a BIG Steak: Reverse Sear

INGREDIENT 

-1 Big ass steak

-Salt/pepper

-Butter

-Garlic 

METHOD

-Preheat oven to 230 deg

-Salt & pepper steak thoroughly

-Insert meat thermometer into center of the steak

-Place steak on a wire rack over a baking sheet

- Cook in the oven until your desired temperature. You want to take the steak out about 10-15 deg before your desired temperature. You will finish cooking the steak when you go to sear it in the pan (105 for rare, 110-115 of medium-rare, 120-125 medium)

-Remove steak and place a pan on med-high (a bit on the higher side) and add oil

-Once the oil is shimmering add in the steak and sear for about 1 min- 1min 30 sec on each side

-When you flip it the first time add in your butter and garlic and baste the steak

-Remove and slice. With the reverse sear you do not need to let the streak rest as you do with a traditional sear

-Enjoy the best steak of your life.
