A few weeks back, I was stumbling through instagram and came across the instagram of the "Pizza Boy" aka Carlo Bertolli. It made my goddamn mouth water:
So I did what any sane person does, I shot him a DM and asked if he could show us his ways. That he did. And his pizza is INCREDIBLE. He's a pizza fucking master, and has range that would make Christian Bale blush. He dominates pub style thin crust, deep dish, and yes, his signature Detroit Style pizza in the third IG link above. I couldn't recommend the pizza more. I don't typically gravitate towards "thick crust" pizza, but Carlo's Detroit pizza was the best I've ever had, and that's not an embellishment. Fantastic spot.
They have an awesome story too. The Bertolli family is very well known in Chicago for their pizza making skills, then Carlo decided to open his own shop in the middle of the pandemic slinging pizzas out of their own kitchen before finally leasing the brick and mortar shop. People love this goddamn pizza because the pizza is that good.
