Shrimp Scampi | The College Cook
INGREDIENTS
-1 1/4 lbs jumbo shrimp, shelled and deveined
-4 Tbsp butter
-2 Tbsp olive oil
-4 cloves of garlic, finely minced
-1/4 cup of white wine (use something dry like chardonnay. Dry just means all the sugar in the wine has been converted to alcohol so there is less sweetness.)
-Pinch of chili flake
-Juice of half a lemon
-Zest of half a lemon
-1/2 a bunch of fresh parsley (about 1/3 cup)
-Salt & pepper to taste
-Spaghetti or linguine noodles
METHOD
-Get a pot of water boiling & add in pasta
-Melt butter and olive oil in a pan over medium heat
-Once melted, add in chili flake and minced garlic
-Stir for 30-60 seconds or until garlic becomes aromatic
-Pour in wine and lemon juice & reduce for 3 mins
-Add shrimp to pan and cook for 1-2 mins
-Turn the shrimp and cook for 1 min
-Turn off head and drag pasta into the pan over the shrimp
-Add a splash of pasta water and begin to swirl viciously to emulsify the oil and butter with the starchy pasta water
-Finish with lemon zest, another zing of juice, fresh parsley, and salt & pepper
