Jambalaya | The College Cook

INGREDIENTS

-3 boneless skinless chicken thighs

-2 andouille sausage links, sliced

-1 white onion, diced

-2 bell peppers, diced (any color bell pepper works)

-1 jalapeño, sliced (optional, omit for a milder dish)

-4 cloves of garlic, smashed

-1/3 cup of jasmine rice

-14oz of crushed tomatoes

-1 Tbsp cajun seasoning (plus another few dashes to coat the chicken) 

-1 Tbsp butter

-1 Tbsp canola oil (can sub for olive oil) 

-3 cups of chicken stock

-spring onions, sliced, for finishing 

-Salt & pepper to taste

CAJUN SEASONING

-2 Tbsp paprika

-1 Tbsp cayenne 

-1 Tbsp onion powder

-1 Tbsp garlic powder

-1 Tbsp oregano

-1/2 Tbsp thyme
