Simple Fried Rice | The College Cook

Fried rice is a perfect way to transform leftovers into a quick meal. You can use this basic method and swap out whatever veggies/protein you want.
INGREDIENTS
-2 eggs, beaten
-1 Tbsp butter
-2 Tbsp veg oil (can sub olive)
-3 cups of day-old rice
-1 carrot, diced
-3 scallions, sliced
-Handful of frozen peas
-3-4 Tbsp of soy sauce
-1/2 Tbsp oyster sauce (optional)
-1/2 Tbsp sugar (optional)
METHOD
-Begin by placing a non-stick pan on med heat, melt 1 Tbsp of butter.
-Add beaten eggs and cook in an even layer, fold a few times then remove from pan.
-Wipe the pan clean of any remaining egg bits and add in oil
-Place the pan on high heat and allow to heat up for 3 minutes
-Add in carrots and base of scallions (reserve the green tops for the end)
-Stir fry for 2-3 minutes
-Add in rice and begin to break up with a spatula
-Add in frozen peas and toss
-Mix soy sauce with sugar and pour over rice
-Add egg and scallions tops, break up the egg into the rice
-Allow to fry for 1 minute to crispen up the rice
-Serve and enjoy
