1 Pan Honey Mustard Chicken | The Quarantine Cook
INGREDIENTS
(I know I said only 4 ingredients in the into, I got a little carried away once I started cooking. Still very simple and delicious)
-2 glugs of olive oil
-4 Chicken thighs
-1/4 cup of beer or white wine
-1 Tbsp Dijon mustard
-1 Tbsp capers (optional)
-2 Tbsp honey
-3 dashes of hot sauce
-3 cloves of garlic
-Fresh parsley (about half a bushel)
-Salt & pepper
METHOD
-Season chicken thighs w/ salt and pepper
-heat olive oil in pan on med-high heat
-Place chicken thighs in pan and do not touch for 2-3 min. Allow crust to form
-Flip once chicken has no resistance in the pan (doesn't stick) cook for another 2-3 mins
-Place garlic in pan and sauté for 30 seconds then pour over beer, mustard, hot sauce and capers
-Stir until combined then simmer for 2-3 minutes, total cook time should be around 10-12 mins for the chicken to cook through
-If the sauce is still too lose, remove chicken and turn burner on high to allow the sauce to reduce further
-Finish dish with fresh parsley
