A few thoughts

- Going through her email/facebook is female behavior. You even used the word snooping. Everyone knows snooping is something broads do. Kill yourself
- She is a whore
- Get yourself some female friends. You don't have to fuck them, but stay in contact/hang out with them. She'll get jealous. When she complains tell her to beat feet if she doesn't like it.
- You're not married. Going to "couples therapy" tells me that she runs the relationship. This should not be.
- You don't trust her because you can't fully trust a woman. Part of you has to believe she can be a traitorous whore...unfortunately for you she's proved that she is a traitorous whore.
- Your chick reaches out to her ex to meet up, he responds in a less than excited manner, she replies "No big deal". She's crushed because she's auditioning new candidates and no one likes being rejected.
- You're officially the standby guy until she gets some new dick. You're probably not fucking her right. She's going to blow one of your best buds. Walk away.
