don't you mean dutch oven?

pretty sure you can't put the ceramic insert from a crock pot directly on the stove and use it as a deep fryer.

Beef stew is great in crockpot. Might try a lamb stew soon. I really should cook more.

pulled pork is a great crock pot item.
ribs can be done well in a crock
chili is better done on the stove in a dutch oven IMO.
beef stew great in crock
cornbeef great in crock and pot roast as well.

You can never go wrong with a tough piece of meat with a lot of connective tissue in a crock pot. But throwing a bunch of meat and veggies with out searing and wilting them down is a waste. Those pan bits you deglaze off the bottom of the pan are too tasty not to have. So I would never just dump it in, would have to at least do that first.

It's not just about the gravy, not sure if you can call it a gravy without using those bits. IMO Its about the flavor of the liquid its stewing in in the CP.

with a nice dutch oven that conducts heat nicely and evenly, why go ahead to dumping into a crock pot?

with the le crueset you can go low and slow on the stovetop.
