Ok going with some short ribs tonight

Do you guys marinate them over night in wine like some recipes say?

I'd dry rub them over night and braise them in wine after I brown them up in EVOO.

I just go with a simple recipe and its been great the last 3 times i have made them.

Brown SR's in dutch oven in evoo
deglaze pan with Cab Sauv
add beef stock, rosemary, garlic, shallot
once the SR's are fork tender I add some mushrooms
also, i brown off some meatballs and toss then in the dutch oven and you have the best meal ever

serve with red bliss mashed

The recipe i used called for 3.5 hours at 375, but I turned it down to 300 at the 2 hour and let it go for about 2 more hours.

The short ribs themselves werent that great this time but the sauce that went with them was amazing

I cooked up 3 racks of ribs yesterday and by all accounts they were outstanding. I kept it simple too. Cut the racks in half, salt, pepper and a dry rub. Wrapped em up in foil and baked in 300 degree oven for 2.5 hours. Take them out of the oven, wait 15-20 minutes and then put on grill with some Sweet Baby Ray's Honey Barbeque for crisping. The ribs were moist, flavorful and the meat fell right off the bone. They were so good I may head down to pick up another slab or two this sweek.

I rub them down with this stuff the night before, and wrap them is plastic overnight, i cook them on the grill for about 2.5 hours on indirect heat and then add the BBQ, while they are cooking I spray them down with apple juice periodically.

I go slower w/ my ribs. 185 degrees in the oven for 6 hours. Wrapped in tight tin foil and with a dry rub.

I also use sweet baby rays.

A Meat House opened up near my house and I got ribs from there last week. They were the best I've ever had. 2 racks of perfect ribs cost me 30 bucks I think. I'm pretty sure their prices are virtually identical to those at Market Basket too. Not for high end stuff, but for marinated tips, chicken, etc.

I'm pretty obsessed with it. Wife's weirded out.
