They used to be the standard bearers with it.
Now,
1) their buyers are no longer "fish" guys and have moved to business guys. Solely looking to maximize unit cost and other metrics rather than "hey that looks like shit, we'll pass."
2) they're so focused on their chowder distribution business that they're buying larger lots of fish knowing that x percent of it won't really be seen as it'll be in a chowder.
3) other high end restaurants are in the business now and are paying more for it. Berkowitz won't.
Old man had some of the Palms national buyers at the Gloucester seafood auction last year and they looked at a lot of obviously non-day boat fish.....he said to them you'll die when you see who's going to buy that.
40 min later the Legals buyer bought it.
Sim, those 3 dishes are awfully hard to fuck up....you're probably fine.
